Our Experience

Before becoming Moka Rica, green coffee goes through several stages.

IMPORTING COFFEE

We import green coffee from the most prestigious plantations in the world, always from the same producers, thereby ensuring a high level of quality and consistency. Furthermore, all batches of green coffee selected for purchase are the result of a pre-selection process based on representative samples of the entire lot, and only the best batches are chosen for acquisition.

COFFEE ROASTING

We roast the coffee using a rotating drum machine with an intermittent cycle, which allows us to roast each origin separately, adjusting the roasting times (approximately 15 minutes) to enhance the aromatic notes of Arabica and Robusta. Arabica has a higher sucrose content, making it less bitter, with caffeine levels ranging from 0.50% to 1.55%, and a high oil content (around 18%), which contributes to a delicate and superior aroma. Robusta, being more resistant and containing up to 3% caffeine, has less oil and sugar, resulting in a more bitter but very creamy flavour. Roasting, a crucial phase in developing aroma and taste, is monitored through computerised control and the expertise of our specialist, ensuring a high-quality coffee.

COFFEE COOLING

Cooling takes place exclusively using air to preserve the aromas for as long as possible. After roasting each type separately and an additional cleaning phase, the coffee is left to mature in large silos; during this period, it releases the aroma and flavour that elevate its quality. Blending the varieties is the secret and the core of the final taste; the recipes are confidential and have been created and refined by Cav. Franco Carella.

COFFEE PACKAGING

Packaging varies from bags and jars for households to capsules and pods for offices, and up to 1 to 3 kg packs for cafés.

The administrative and commercial offices constantly oversee all stages of processing, supported by the most advanced operational techniques. Our spacious and bright warehouses keep the green coffee beans, finished products, and packaging materials stored separately.


The Analysis Laboratory ensures high production quality by monitoring the raw materials upon arrival, the processing stages, and the finished product using the most modern techniques and equipment.


The experience and skill of our master roasters are fundamental for the balance and consistency of the blends produced.
